Long days behind the bar, perfecting the shape of a nigiri, the temperature of the rice, the balance between salt and sweetness that separates ordinary sushi from something that lingers in memory.
What began as a simple love for sushi became a language of its own, a discipline of movement, patience, and taste. Seven years passed in that world of gleaming knives and fresh-cut tuna, where every roll carried the echo of dedication. The kind of craft that can’t be taught, only earned.

In 2023, the journey found its home in South Fremantle, a seaside neighbourhood where ocean breeze drifts through every doorway and sunlight lingers a little longer on the windows. Here, among the scent of salt and the hum of passing cyclists, J Panda Eatery opened its doors.
It was designed to impress through presence, the quiet confidence of sushi made fresh each morning, the warmth of a smile behind the counter, the feeling of something familiar yet new. The air inside carries a mix of vinegar, rice, and calm; outside, the sea waits just beyond the street.
J Panda became a meeting place, where locals pause after a swim, travellers discover a taste of Japan by the coast, and every tray of sushi tells the same story: that food, when made with heart, can feel like home no matter how far you’ve travelled.

This story reflects not just our food, but also the emotional connection we hope to create with everyone who visits J Panda Eatery. The goal is to share authentic Japanese sushi skills and flavours with the local community as well as visitors from nearby areas.

Story Behind Our Name & Logo
Even its name carries quiet poetry. “J” for Japan, and “Panda,” an emblem of joy. That same spirit is carried into our mascot as well. A panda with the mouth left unwritten, to echo the unspoken stories of those who sit before it. So, its expression belongs to you, mirroring your smile, your calm, or your silence. With the salmon cut eyes carrying freshness of the sea, timeless glow of Japan’s red circle, and two chopsticks cross below, embodies our sushi tradition and the final gesture of an invitation.
This fusion represents our bridge between authentic Japanese tradition and the warmth we want to bring to every customer.

Our panda mascot has no mouth, a small silence left open for imagination. When you're happy, the panda smiles with you. When you're reflective, it shares that mood too, becoming your quiet companion.

The panda's salmon-shaped eyes hold the shimmer of the sea; a nod to the craft of sushi making, fresh, balanced, and alive with colour and a quiet reminder of the beautiful ingredients we work with daily.

Behind it glows a red circle, the spirit of Japan, eternal and rising. While the two chopsticks rest below, symbols of our dining tradition and respect, reminding everyone of the quiet joy of sharing good food.
